Biographical Notes	Dufour was a French merchant and writer, mainly known for a treatise on tea, coffee, and chocolate titled ‘De l’usage du caphé, du thé, et du chocolate’ (1671). There are contradictory accounts of Durfour's profession. Ina Baghdiantz McCabe, Orientalism in Early Modern France (2008), claims Dufour was a doctor. Ross W. Jamieson, 'The Essence of Commodification: Caffeine Dependencies in the Early Modern World', Journal of Social History, Vol. 35, No. 2 (Winter, 2001), calls him a 'pharmacist'; the BNF catalogue calls him a spice merchant; and the BL catalogue lists Dufour as a pseudonym of 'Jacob Spon'.
